Penne with Italian Speck cured ham, mushrooms and peas

  • 300 g short pasta (Sedani)
  • 250 g  ricotta
  • 100 g Italian Speck cured ham
  • 200 g mushrooms
  • 250 g peas (fresh or frozen)
  • Olive oil
  • 1 shallot
  • Salt and Pepper

Finely chop the shallot. Pour a little olive oil into a pan and when hot, add the shallot and sauté for a few minutes.

Cut some Italian Speck cured ham into strips. Clean the mushrooms before chopping them into small pieces. When the shallot begins to brown, add the pieces of Italian Speck cured ham as well as the mushrooms and simmer over a low heat. Mix everything together and sauté all the ingredients for a few minutes until they start to brown.

Then add a small amount of water and the peas to the pan. Season with salt and pepper , stir and simmer for around 20 minutes.Take a pot, fill it with water, add a pinch of salt and bring to the boil. Once the water is boiling, add the pasta and cook according to the instructions on the packet (firm, al dente, soft). When the pasta is cooked, drain using a colander, keeping back a small amount of the cooking water in the pot. Add the ricotta to the pot that had the pasta in it, then whisk the water and ricotta together to form a smooth cream.

Then tip the pasta into the pot containing the cream and mix. Now add the ingredients from the pan (peas, Italian Speck cured ham, shallot and mushrooms). Mix everything together.
